It just occurred to me

That I keep talking about this, and I haven't given anyone the recipe:

Warm Chocolate Truffle Tart

1/2 cu unsalted butter (I used salted)
1/4 cup sugar
3/4 teaspoon vanilla
1/8 teaspoon salt
1 cup all-purpose flour

5 tablespoons unsalted butter, cut up (again)
1/2 cup sugar
1/4 unsweetened cocoa
1 cup whipping cream
1 1/4 teaspoons instant espresso coffee powder (I just used lots more chocolate, because I don't like coffee)
1/2 teaspoon vanilla
1 egg, lightly beaten

Heat oven to 350F. Melt 1/2 cup butter in medium saucepan over medium heat. Remove from heat; stir in 1/4 cup sugar, 3/4 teaspoon vanilla and 1/8 teaspoon salt. Stir in flour just until well-combined.

Press dough in bottom and up sides of a 9 1/2 inch tart pan with removable bottom (I used the bottom and part of the sides of a normal springform pan). Place pan on baking sheet. Bake 20 to 25 minutes or until deep golden brown.

Meanwhile, melt 5 tablespoons butter in same medium saucepan over medium heat. Add 1/2 cup sugar, cocoa, and cream. Cook over medium heat, stirring until mixture is smooth and small bubbles begin to form around the edges. Remove from heat; stir in coffee powder and 1/2 teaspoon vanilla.

Just before crust is done baking, whisk egg thoroughly into hot chocolate mixture. Remove crust from oven; pour filling onto hot crust. Return to oven; bake 10 to 12 minutes or until barely set. (Filling will quiver slightly when tapped at side.) Cool in pan on wire rack 25 minutes. Serve tart warm or at room temperature. Store in refrigerator.

Garnish as desired (I've been eating it plain; Barb likes it with blueberries).

It was VERY easy -- I even made up the filling in advance (sans egg) and then warmed it up to whisk in the egg while the crust was baking, and it came out fine.

I added about 2 ounces of bittersweet chopped chocolate rather than the coffee, though.

Mmmmm. No can has. For some reason (probably inactivity), I didn't lose weight last week. No gain, but no loss. I must shed the "sticky" pounds!

I think I may actually be eating too few calories. Today I don't feel so great (my joints ache), and I know I've only had around 900 calories. I need to get apples and fruit and remember to take them to work (that last is the hard part).

Yes, be careful! Carrot sticks are good, too.
